Chocolate Chip Mini Cheesecakes

Healthy Mini Chocolate Chip Cheesecakes

I found this recipe for Chocolate Chip Mini Cheesecakes on Pinterest a while ago, but decided to carve sometime out the other night to bake. To make them a little more “healthy” I substituted a few of the ingredients; they still tasted absolutely fabulous but for less calories. So, you ready to bake them?? Here is how:

To Make 12 Chocolate Chip Mini Cheesecakes

Ingredients

  1. 2 8oz packages of Neufchatel Cheese Bar (healthy version of cream cheese)
  2. 1/2 cup of Splenda NECTRESSE™ Sweetener
  3. 2 eggs
  4. 1/2 cup of semi-sweet chocolate chips
  5. 1 cup crushed graham crackers
  6. 4 tablespoons Smart Balance butter (melted)

Instructions

  1. Preheat oven to 350 degrees and line a cupcake pan with baking cups.
  2. Crush graham crackers and mix with melted butter.
  3.
Press one tablespoon of graham cracker crumbs into each baking cup.
  4. Mix together neufchatel cheese, NECTRESSE™ Sweetener, and eggs until light and fluffy.
  5.
Fold chocolate chips into cream cheese mixture.
  6.
Fill baking cups 2/3 way full; bake for 20 minutes.
  7. Cool in the fridge for at least 1 hour before eating

[…] When I first saw the Splenda Nectresse in my VoxBox, I was intrigued to say the least. I thought “A no calorie sweetener made from Monk Fruit? This is either going to be really good or really nasty” After I tasted it, my conclusion was it is really, really good! It’s very sweet and doesn’t leave that aftertaste that other no calorie sweeteners do. It actually has a hint of sweetness that taste like an orange, but I am guessing that is the taste of the monk fruit. I made Chocolate Chip Mini Cheesecakes using Nectresse. They turned out wonderful! You can view the recipe here. […]
